Cyprus – Baklava

Week two of Cyprus. I was pretty intimidated by the idea of making this. Baklava was Cyprus’ choice of national dish in Cafe Europe, and it seemed only fair to try it for myself, especially as it was Europe Day last week.

Croatia – Medenjaci

This week we reach Croatia – the most recent member of the EU, joining in 2013. Croatia is the home of the dalmatian, Nikolai Tesla and neckties, as well as being the place where the world’s longest strudel was baked (1,479.38 metres, if you’re interested).

Ginger and Lemon Biscuits

Uhhhhhh… I think I just found my favourite biscuit EVER. These are so beautiful. If you like ginger biscuits, these are even better. The hint of lemon is just wonderful, and it works really well. I’ve been drinking a lot of herbal tea recently, and when I was feeling a little under the weather the…

Honey and Pistachio Semolina Cake

I’m BACK! Canada was incredible and beautiful and just an excellent holiday all round. We saw the best of what South Saskatchewan had to offer, spent time in Banff National Park (amazing), and most importantly got to see our friends Jordi and Robbie and their ADORABLE baby Leo. He is so lovely. I really miss…

Walnut, Chocolate and Honey Tart

I think often the wondrousness of walnuts is underestimated. Can we just talk about this for a minute? I mean, first, there was the caramel walnut upside down banana cake, and now there is this walnut, chocolate and honey tart. Know what they have in common? WALNUTS. Also, plenty of sugar and butter. But even…

Apple and Courgette Cake

I’ve only baked with courgette once before. It’s one of those vegetables that doesn’t really scream “bake with me”. In fact, I had a lengthy discussion with my colleague about the merits of baking with courgette. I couldn’t really think of any apart from one – it’s moist. Also, it has quite a subtle flavour…

Honey Nut Biscuits

Another busy week is almost over. Once again, I made these a few days ago, but am only just having the time to write about it now! My original plan to make apple and courgette cake changed into honey nut biscuits, and so, here we are.    These biscuits are great – although not entirely…

Farewells

My most excellent friend Laura is leaving for Paris in a couple of weeks to do a masters at Sciences Po. Today she left Cambridge to go back home to Gloucester for a while before she leaves for good. Her leaving party was originally meant to include cake, which I unfortunately failed to make, and…

Foodie PenPals #1

So, slightly belated, as I was supposed to write about this two days ago (I’ve been celebrating the fact that I just found out I got a 2:1 for my degree!). I signed up for Foodie PenPals at the beginning of July, and so received my first parcel a few days ago! It came from the…

Pollen Allergies and Birthday Cakes

So, this week didn’t turn out quite as planned on the baking front. Having spent most of the week coughing and sneezing from the worst hayfever I’ve ever experienced, baking wasn’t really up top of my priority list. It was my friend Jade’s 21st birthday on Thursday and I was going to make a cake…
